Perspectives

This is the only AOC vintage of the vineyards. Following a rigorous selection of vineyards, its backbone is mainly composed of Grenache (for opulence) and Syrah, associated with a variable part of Carignan and Mourvedre. The Syrahs are mostly traditionally aged and vinified and then brought up in barrels for 12 months. A fraction of these Syrahs comes from younger vines, vinified in whole grapes giving an additional aromatic splendor to the whole.

Tasting

The color is deep red (black glints). The nose is concentrated, opening on notes of coffee, cocoa, black cherry and Ente plum very ripe, dark berries (blackberry, blackcurrant) and tapenade.
The mouth is full, licoriced, supported by young but soft tannins, very long.

Suggestion

Prime rib grilled with sea salt from Camargue, roast goose, wildfowl…
Ideal partner : braised boar stew and strengthened with black olives.
Maturing has not erased the fruit but gave subtlety by polishing tannins. It can be drunk in its youth or wait until its maturity
